A few weeks ago I prepared this apple cake.

Yes, another apple cake is true, but this one is not only spiced but also amazing and then it’s by Ottolenghi, taken from his book Simple.
I didn’t have high expectations, I kept telling myself that all this hype around this cake was unjustified and yet I had to change my mind.

Soft, spiced, and the apples that remain crunchy make it incredibly good.

The softness of the cake is undoubtedly due to the presence of sour cream in the dough which gives a perfect consistency, please do not replace it with regular cream, trust me, I opted to prepare it with the Thermomix (I used lactose-free cream and yogurt).

The original recipe requires 3 apples, including 1 granny smith and 2 bramleys; I used 3 golden apples which are more easily available and it turned out just perfect. 🙂
As for the spice mix, a specific mix called Mixed spices is mentioned, which in the UK is sold consisting of cinnamon, cloves, nutmeg, and allspice, but alternatively, you can use a gingerbread spice mix.

I served it for a snack among friends and it was appreciated by everyone, the leftover part (little) I ate for breakfast, because of the apples and sour cream it only lasts a few days.

Thermomix Spiced Apple Cake

Ingredients

  • 130 gr butter *
  • 150 gr sugar
  • 3 eggs
  • 2 tsp vanilla extract
  • 300 gr plain wheat flour
  • 2 tsp baking powder
  • 200 gr sour cream *
  • 1 pinch salt

For the apple topping:

  • 3 large apples
  • 130 gr brown sugar
  • 1 tbsp mixed spice *

Instructions

  1. Put the butter and sugar in the bowl, whisk (without butterfly): 3 min. speed 3.

  2. Remove the mixture from the walls with the help of the spatula and operate at speed. 3 and from the hole in the lid add the eggs, continue for 1 min. speed. 3.

  3. At this point, add the baking powder, salt and half of the flour, mix: 30 sec. speed. 3.

  4. Add the sour cream, mix: 30 sec. speed. 3.

  5. Finally, add the rest of the flour, mix: 1 min. speed. 4. It should be a homogeneous compound.

  6. Pour the resulting mixture into a baking tray (22 cm) previously lined with parchment paper.

  7. At this point, peel the apples, remove the core and cut them into 1.5 cm wedges and mix them in a bowl together with the sugar and spices.

  8. Place the spiced apples directly on the surface of the dough, covering it completely.

  9. Bake at 160°C for about 60-65 minutes, until the cake has risen around the apples and the top is crispy and golden.

  10. In this case, the toothpick test will not work because the apples will be moist, you can tell if the cake is cooked by tapping the pan a small tap, if the top does not sway, the cake is ready.

  11. Remove from the oven and let the cake cool for about 30 minutes before removing it from the mold.

  12. It can be served at room temperature or just lukewarm… Buon appetito!

Recipe Notes

*For those intolerant to dairy products, it is possible to replace them with lactose-free butter and sour cream can be prepared with the thermomix using lactose-free yogurt.
**it is a mix of ginger, cinnamon, nutmeg and cloves, it can be replaced with the gingerbread mix.
