You will never believe it, but I had never tried the creamy lemon sorbet before.
Actually, I correct myself, I had tasted it at a dinner with friends but I had never tried to make it at home, and yes it’s available in the official basic book but I had never noticed it. 😀
How has your week been? I’m a bit overwhelmed, sleeping poorly and I find myself struggling at certain times of the day, and the heat does not help at all.
Last week I prepared Thermomix creamy coffee sorbet, the other day the lemon sorbet came to my rescue, with which I had a snack. I prepared it in the evening and put it in the freezer overnight, then churned in the afternoon, delicious and super creamy.
I think it might also be possible not to use the egg white in the preparation, soon I’ll try to give you a confirmation. 🙂
In any case, it is perfect to serve after dinner, refreshing and digestive.

Thermomix Creamy lemon sorbet
Ingredients
- 650 gr water
- 350 gr sugar
- 200 gr lemon juice
- 1 egg white
Instructions
Put 400 grams of water and sugar in the bowl, dissolve: 5 min. 100° speed 3.
Add the rest of the water (250 g) and the lemon juice, mix: 5 sec. speed. 3.
Add the egg white, mix: 5 sec. speed. 4.
Pour the resulting mixture into a wide, low container and cover with plastic wrap.
Allow to cool completely at room temperature and then place the container in the freezer for at least 8 hours.
At this point, take back the container and cut the mixture into pieces and place them in the mug, stir: 30 sec. vel. 9.
Stir again: 30 sec. speed. 4 with a spatula (mix with the help of the spatula through the hole in the lid).
The creamy lemon sorbet thermomix is ready to be served… Buon appetito!
