Today’s recipe is a sweet American classic and the inspiration recipe comes from Nigella’s book, to which I made some minor changes.
It is a simple and quick to prepare plumcake and its incredible fragrance will invade the whole house.
It is excellent both for breakfast and for a snack, ideal if you have those blackened bananas at home that are about to go bad.
Children will like it very much, and you will be amazed of how much you like it too.

Thermomix Banana bread
Ingredients
- 250 gr plain wheat flour
- 130 gr sugar
- 2 eggs
- 2 bananas large
- 3 gr baking soda
- 1 tsp extract vanilla
- 90 gr sunflower oil
- 125 ml yogurt white
- 100 gr chocolate chip
- 1 pinch salt
Instructions
Put the dry ingredients in the jug (flour, sugar, baking soda, salt) to mix: 30 sec. speed 4 and set aside.
Put the bananas in the empty jug, blend: 10 sec. speed 6.
Gather at the bottom with the help of the spatula and add the eggs, vanilla, oil and yogurt, mix: 1 min. speed 4.
Combine the dry ingredients that were put aside and mix: 1 min. speed 4.
Finally add the chocolate chips, mix: 20 sec. Reverse speed 3.
Pour the mixture into a plumcake mold previously coated with parchment paper.
Bake in preheated oven at 180° C for about 50 minutes (always do the toothpick test).
Allow to cool completely and serve the cake in thin slices… Buon appetito!
Recipe Notes
You can add almonds strips or other dried fruit to the dough before baking.
Keep for a few days in an airtight container.
