Ingredients

For the base:

  • 175 gr plain wheat flour (or 00 flour)
  • 85 gr sugar
  • 140 gr cold butter *
  • 1 tbsp milk *

For the cream:

  • 200 gr lemon juice + zest of 3 lemons
  • 3 eggs
  • 200 gr sugar
  • 25 gr plain wheat flour (or 00 flour)

Instructions

For the base:

  1. Put all the ingredients in the bowl to prepare the base, knead: 20 sec. speed 5.

  2. Cover a baking tray (20×20), possibly with a removable bottom, with parchment paper and transfer the mixture obtained, pressing carefully with your fingers and compact well.

  3. Bake in a preheated oven at 180°C for about 20 minutes, the mixture should just brown.

For the cream:

  1. Put all the ingredients for the cream in the bowl, blend: 1 min and 30 sec. speed 3.

  2. Pour the resulting mixture over the base and bake again in the oven at 180°C for about 10-15 minutes.

  3. Allow to cool completely and unmold.

  4. Cut into squares and serve sprinkled with icing sugar… Buon appetito!

Recipe Notes

They are kept in the refrigerator closed in an airtight container for 2-3 days.
For those who are intolerant to dairy products, it is possible to replace butter and classic milk with lactose-free ones.
