Good morning, here in Turin it hasn’t rained for 24 hours and hoping it lasts, I take the opportunity to publish the Thermomix Lemon Curd recipe!

This time, however, I had to skip it for a good reason, my sister broke her foot hitting against a piece of furniture and we had to take her to the emergency room where they treated her.

But let’s move on to today’s recipe, Thermomix Lemon Curd is a lemon cream of Anglo-Saxon origin used as a dessert to accompany scones or muffins or simply to fill tarts. For the recipe, I was inspired by Nigella’s, published in the book Delizie Divine.

A cream that I absolutely love, so much so that I eat it spread on bread or by ‘spoonfuls’ from the jar. 😀

Thermomix Lemon Curd

Ingredients

  • 2 lemons (only zest)
  • 125 ml lemon juice
  • 100 gr sugar
  • 80 gr soft butter *
  • 2 eggs

Instructions

  1. Wash and dry the 2 lemons well, remove the peel without the white part and put it in the bowl together with the sugar, pulverize: 10 sec. speed 8, gather on the bottom with the help of a spatula.

  2. Squeeze the lemons and obtain about 125 ml of juice (if necessary squeeze a quarter).

  3. Filter the juice through a strainer and add it to the bowl together with the butter and eggs, cook: 15 min. 90° speed 2.

  4. Remove the measuring beaker and continue cooking: 8 min. 90° speed 2.

  5. When cooking is complete, place the measuring beaker and blend: 10 sec. speed 6.

  6. Pot in sterilized jars and refrigerate… Buon appetito!

Recipe Notes

To be served on slices of bread or to fill a pie, strictly at tea time.

*For those who are intolerant to dairy products, lactose-free butter can be used.
