The vegetarian chili is ready in 30 minutes and is liked by everyone, vegetarians and non-vegetarians alike. 🙂
It’s one of those recipes I’ve been making for a while but hadn’t yet decided to publish, it has saved my dinner more than a few times, a spicy and comforting chili, perfect to be served with tortillas.
For the recipe of the vegetarian chili, I was inspired by Martha Stewart’s book Vegetariana, very interesting in which she explains both the recipes and some basic techniques very well.
The beef chili is a very spicy traditional Mexican dish and this is the meat-free version, super quick, you can garnish the dish with corn, cilantro, fresh green onions, or avocado, and of course, you can reduce the amount of chili pepper as you like.

Thermomix Vegetarian Chili
Ingredients
- 1 large onion
- 15 gr extra virgin olive oil
- 1 chili pepper
- 2 garlic cloves (optional)
- 1 tsp chili powder (or to taste)
- 2 tsp cumin powder
- 400 gr red beans already cooked and drained
- 200 gr white beans already cooked and drained
- 500 gr tomato sauce with pieces
- 250 ml water
- salt to taste
For decoration:
- fresh coriander to taste
- fresh onion to taste
- tortillas to taste
Instructions
Put the onion, garlic and fresh chilli pepper in the bowl without seeds and filaments, chop: 5 sec. speed 5.
Gather on the bottom with the spatula and add the oil, cumin and chilli powder, flavor: 3 min. 100° speed 1.
Add the beans, tomato pulp and water, cook: 25 min. 100° Reverse speed 1.
Season with salt and serve the vegetarian chili garnished with fresh onion and coriander, it is perfect accompanied by tortilla or tacos… Buon appetito!
Recipe Notes
You can serve it as desired with fresh corn, diced fresh tomato, or with avocado slices.
