Zucchini soup is a quick way to prepare a dinner at the last minute.
I find that the soups are perfect on those evenings when you come home after a day of work and you don’t want any ideas for dinner.
A creamy and warm soup ideal for serving on colder evenings, or if prepared in summer it can be served warm.

Thermomix zucchini soup
Ingredients
- 3 zucchini
- 3 medium potatoes
- 1 fresh shallot or onion
- 20 gr oil
- 400 ml vegetable broth (or water + thermomix vegetable bouillon)
Instructions
Put the shallot or onion in the bowl, chop: 5 sec. speed 7.
Gather at the bottom with the help of a spatula and add the oil, fry: 3 min. 100° speed 1.
Add the peeled potatoes and the cleaned zucchini, both cut into pieces, together with the broth and cook: 25 min 100° speed 1.
At the end of cooking, blend: 30 sec. speed 6.
Serve with a drizzle of raw oil and a sprinkling of sesame if desired… Bon Appetit!
