Thermomix Blueberry muffin

It’s blueberry season and I couldn’t miss trying the famous blueberry muffins.

Muffins are a classic of American pastry, loved by both adults and children. They are soft little cakes, sometimes filled with chocolate or other times with fruit, and are perfect for breakfast or a snack, and making them with Thermomix makes the process even simpler and faster.

Blueberry muffins may be enriched with fresh or frozen blueberries. Their texture is compact yet soft and the presence of blueberries gives them a sweet flavor with a touch of acidity.

To prepare blueberry muffins with Thermomix, mix liquid ingredients like eggs, milk, yogurt, and oil (or melted butter) and then add dry ingredients like flour, sugar, and baking powder. Finally, fold the blueberries into the batter; I always coat them in flour so they don’t sink to the bottom while baking.
The mixture is then distributed in muffin cups and baked in the oven.
I added yogurt to the dough to make them even softer, but if you don’t have it, you can substitute the yogurt with milk. For a crunchy topping, add brown sugar on the surface before baking.

The secret to making soft and fluffy blueberry muffins is not to overwork the dough. In fact, the more the dough is worked, the more compact the muffins will be. Also, it’s important to check the baking: the muffins are ready when they are puffed up and golden, and always remember to do the toothpick test, when it comes out clean the muffins are cooked. Remember to let the muffins cool before eating: resting allows the internal structure to stabilize and maintain their softness.
