Eggplant Gratin is a classic dish in many cuisines, known for its hearty layers of eggplant, a creamy sauce, and often topped with cheese and breadcrumbs. This dish brings out the best of eggplant, making it soft inside with a crispy, cheesy crust on top.

To make a perfect Eggplant Gratin using your Thermomix, follow these valuable tips:

  • Choosing the Right Eggplant: Opt for firm, glossy eggplants. They have fewer seeds and are less bitter, making them perfect for a gratin.
  • Slicing: Use the slicing attachment of your Thermomix to get uniform thin slices, which cook evenly.
  • Sweating the Eggplant: Lightly salt the eggplant slices and let them sit for about 10-15 minutes to draw out moisture. This reduces bitterness and prevents a soggy gratin.
  • Layering: Layer your ingredients neatly to ensure every bite is as scrumptious as the last. Start with eggplant, then sauce, and repeat, finishing with a layer of cheese on top.

With these steps, your Eggplant Gratin will turn out delicious with a pleasing texture.
