Thermomix recipe 100% made in Italy for mayonnaise

I wanted to prepare some Egg salad but I did not have any mayonnaise at home, so I decided to prepare it with the thermomix.

Mayonnaise is one of the most common sauces in the world and is prepared with only 3 ingredients: eggs, oil and lemon.

I made mine with fresh eggs from my mother’s colleague and it came out a real goodness.

I recommend using only fresh eggs.

Thermomix mayonnaise

  • 1 egg
  • 1 egg yolk
  • 250 gr sunflower oil
  • 20 gr lemon juice
  • salt enough


  1. Put the eggs, lemon juice and salt in the jug, whisk: 1 min. speed 4.

  2. Raise the speed to 5 and pour the oil on the lid of the thermomix, keeping the measuring spoon upside down, so that the oil filters slowly and raise the speed once again to 6.

  3. When the oil is finished, emulsify: a few seconds at speed. 7.

  4. At this point the mayonnaise is ready, store it into the fridge until it is time to serve it… Buon appetito!

Recipe Notes

You can keep it for a maximum of two weeks, closed in an airtight container and placed in the refrigerator. But it never lasted more than a week, because we finish it earlier.
