Today another “anti-cold” recipe is to say what you need precisely at these almost winter temperatures.
I didn’t have much in my pantry, some leeks and some potatoes, the soup was perfect, really quick to prepare and in a moment I solved dinner.
It is possible to freeze the leftover cream once it has cooled, in an airtight container.

Thermomix potato and leek soup
Ingredients
- 3 medium leeks
- 4 medium potatoes
- 30 gr extra virgin olive oil
- 400 gr water
- 1 tsp vegetable bouillon thermomix
- parmesan grated enough (optional)
Instructions
Put the leeks cut into rings with oil in the bowl, fry: 3 min. 100° speed 1.
Add the potatoes cut into thin slices, the water until everything is covered and the thermomix nut, cook: 25 min. 100° speed 1.
Then blend everything together: 30 sec. speed 6. If it is too thick, add some water and continue cooking: 5 min. 100° speed 1.
Drizzle with a drizzle of oil and, if desired, serve with croutons of bread or with a sprinkling of grated Parmesan… Bon Appetit!
