Risotto with asparagus is a typical spring dish, the only season where you can find good and fresh asparagus.

For a good result of the risotto it is necessary to use a good kind of rice, like that of Carnaroli, which will very well bond with the asparagus, creating a creamy risotto.

Thermomix Asparagus risotto

Ingredients

  • 400 gr asparagus
  • 350 gr Carnaroli rice
  • 40 gr extra virgin olive oil
  • 1/2 onion
  • 50 gr white wine
  • 100 gr milk
  • 800 gr water
  • 1 tsp vegetable bouillon
  • 30 gr butter
  • 30 gr parmesan cheese grated (optional)

Instructions

  1. Cut the asparagus tips and set them aside.

  2. Put the onion and the soft part of the asparagus stem in the jug, chop: 5 sec. speed. 4.

  3. Gather at the bottom with the help of the spatula and add the oil, fry: 3 min. 100° speed. Soft.

  4. Add the rice and the asparagus tips, season: 3 min. 100° anticlockwise speed. 1 (during these 3 minutes wet with wine).

  5. Pour the water and the thermomix bouillon, cook: 13 min. 100° anticlockwise speed. Soft.

  6. After 10 minutes add the milk, salt and continue cooking.

  7. After cooking, check the cooking of the rice. Leave to rest for a few minutes in the jug, add a knob of butter and whisk with the help of the spatula.

  8. Serve as you like it most with Parmesan... Enjoy your meal!

My advice

If you replace dairy products with vegetable ones and do not use Parmesan, the dish becomes suitable for vegans.
