recipe where I could prepare a delicious mascarpone cream with pasteurized eggs, aka cooked.
I recommend to let the mixture cool well after cooking in the refrigerator before adding the mascarpone.
Another thing, the cream is ready and finished like this, without using sour cream.

Thermomix Mascarpone cream
Valid for: Thermomix TM5 / TM31
- 3 eggs
- 6 tbsp sugar
- 500 gr mascarpone cold from the fridge
Place the butterfly in the jug and add eggs and sugar, whisk: 10 min. 80° at speed 3.
Once it is at room temperature, place in the fridge, directly in the jug, for about 30 minutes.
Take the jug again, add the mascarpone and mix: less than 1 minute at speed 3.
The cream is ready, it can be used to prepare a tiramisu, to accompany a sponge cake or to serve with cocoa powder... Enjoy your meal!
For those who are intolerant to dairy products, it is possible to replace the classic mascarpone with a lactose-free one.
