Today’s recipe is perfect these days of almost autumn, thermomix pancakes are actually perfect always, all year round!
With pancakes, it was love at first bite, the first time I tasted them was in Canada as a young girl, precisely in Toronto, prepared by my aunt for Sunday brunch.
They are delicious with maple syrup, think that back from vacation in a suitcase there were two big bottles of maple syrup! 🙂
The recipe for pancakes is by Nigella and is taken from her book How To Be A Domestic Goddess, very simple to make and quick, I have only adapted it to the thermomix.

Thermomix Pancakes
Ingredients
- 2 eggs
- 225 gr plain wheat flour
- 1 tbsp baking powder
- 30 gr butter melted and cooled
- 300 ml milk
- 1 pinch salt
- 1 tsp sugar
- maple syrup enough
Instructions
Put all the ingredients in the bowl, mix: 30 sec. speed 4, set aside and let the batter rest for 20 minutes.
Heat a griddle or pan, brush the bottom with butter, pour in a ladle of mixture and let it cook.
When the surface has bubbles, it will be time to turn them over, cook them also on the other side, a few minutes will suffice.
Serve stacked one on the other, 3 or 4 each (depending on the size) and sprinkle them with maple syrup… Bon Appetit!
Recipe Notes
It is possible to freeze them once cooked and allowed to cool completely. I put a sheet of parchment paper between one pancake and another and then closed them in a frozen bag.
To defrost them, just move them to the fridge and then let them spend a few minutes in a pan.
I used this baking powder.
